Ingredients:

  • 500g boneless chicken, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, sliced
  • 2 bell peppers (red and green), sliced
  • 2 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 green chilies, slit
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons tamarind paste
  • Fresh cilantro, chopped (for garnish)
  • Juice of 1 lemon

Instructions:

  1. Heat the vegetable oil in a large pan over medium heat. Add cumin seeds and let them splutter.
  2. Add sliced onions and sauté until they turn golden brown.
  3. Stir in the minced garlic, grated ginger, and green chilies. Cook for another minute until fragrant.
  4. Add the chicken pieces and cook until they are browned on all sides.
  5. Incorporate the sliced bell peppers and chopped tomatoes. Stir everything together.
  6. Add coriander powder, turmeric powder, and salt. Mix well and cook for about 5-7 minutes until the chicken is cooked through.
  7. Stir in the tamarind paste and garam masala. Let it simmer for another 2-3 minutes.
  8. Remove from heat and finish with a squeeze of lemon juice and chopped cilantro.
  9. Serve hot with rice or naan.
