Ingredients:

  • 2 cups potatoes, diced
  • 1 can chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic, ground cumin, and smoked paprika, and cook for an additional 1-2 minutes until fragrant.
  3. Add diced potatoes and chickpeas to the pot, mixing well with the onion and spices.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to a simmer and cook for 20-25 minutes, or until the potatoes are tender.
  5. Using an immersion blender, blend the soup until smooth, or transfer to a blender in batches. Adjust seasoning with salt and pepper.
