Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons tahini
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped

Instructions:

  1. In a food processor, combine the chickpeas, tahini, olive oil, garlic, lemon juice, cumin, smoked paprika, salt, and pepper.
  2. Blend until smooth, scraping down the sides as necessary. If the mixture is too thick, add a little water to reach the desired consistency.
  3. Once smooth, mix in the chopped parsley and dill by hand.
  4. Taste and adjust seasoning if necessary.
  5. Transfer to a serving bowl and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Serve chilled or at room temperature with crusty bread, crackers, or vegetable sticks.
