Ingredients:

  • 1 cup canned chickpeas, drained and rinsed
  • 1/2 cup peanut butter
  • 1/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 egg

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine the chickpeas, peanut butter, sugar, baking powder, cinnamon, salt, vanilla extract, and egg. Blend until smooth and well combined.
  3. Using a spoon or cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  4. Flatten each cookie slightly with the back of a fork.
