Ingredients:

  • 1 pound flank steak
  • 2 tablespoons olive oil
  • 3 tablespoons lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup crumbled queso fresco (optional)
  • Lime wedges for serving

Instructions:

  1. In a bowl, whisk together olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper to create a marinade.
  2. Place the flank steak in a resealable plastic bag and pour the marinade over it. Seal the bag and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade, allowing excess to drip off.
  4. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes before slicing thinly against the grain.
  5. In a large bowl, combine mixed salad greens, cherry tomatoes, avocado, red onion, and cilantro.
  6. Top the salad with the sliced steak and sprinkle with queso fresco, if using.
  7. Serve with lime wedges on the side.
