Ingredients:

  • 2 chicken breasts, boneless and skinless
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 large flour tortillas
  • 1 cup cooked cilantro-lime rice
  • 1 cup canned black beans, rinsed and drained
  • 1 cup pico de gallo
  • 1/4 cup sour cream
  • 1 tablespoon chipotle sauce
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. In a bowl, mix olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Grill marinated chicken over medium heat for about 6-7 minutes on each side until fully cooked. Let it rest for a few minutes before slicing.
  3. Warm the flour tortillas on a skillet until pliable.
  4. On each tortilla, layer cilantro-lime rice, sliced grilled chicken, black beans, pico de gallo, and shredded cheese if using.
  5. In a small bowl, mix sour cream with chipotle sauce and drizzle over the fillings.
  6. Sprinkle with fresh cilantro, then fold the sides of the tortilla and roll it up tightly.
  7. Serve immediately with extra pico de gallo or chipotle sauce on the side.
