Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 ripe mango, diced
  • 1/4 red onion, finely chopped
  • 1/2 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions:

  1. In a bowl, mix olive oil, lime juice, chipotle chili powder, cumin, garlic powder, salt, and pepper to create a marinade.
  2. Add chicken thighs to the marinade, ensuring they are well coated. Let marinate for at least 30 minutes.
  3. While the chicken is marinating, prepare the mango salsa by combining diced mango, red onion, jalapeño, cilantro, and lime juice in a bowl. Season with salt to taste.
  4. Heat a grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes per side, or until fully cooked and slightly charred.
  5. Remove chicken from the grill and let it rest for a few minutes before slicing.
  6. Warm the corn tortillas on the grill for about 30 seconds on each side.
  7. Assemble the tacos by placing sliced chicken on each tortilla and topping with mango salsa. Serve immediately.
