Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons chipotle chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 8 small corn tortillas
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions:

  1. In a bowl, mix the chipotle chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  2. Rub the spice mixture onto the chicken thighs, ensuring they are well coated.
  3. Heat olive oil in a skillet over medium heat. Add the chicken and cook for about 6-7 minutes per side, or until fully cooked through and slightly charred. Remove from heat and let rest for a few minutes.
  4. While the chicken is resting, prepare the mango salsa by combining diced mango, red onion, jalapeño, cilantro, and lime juice in a bowl. Season with salt to taste.
