Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 teaspoons chipotle chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 corn tortillas
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 avocado, sliced
  • 1 cup crumbled queso fresco (optional)

Instructions:

  1. In a bowl, mix olive oil, chipotle chili powder, cumin, garlic powder, paprika, salt, and pepper. Add the chicken thighs and coat them in the marinade. Let marinate for at least 30 minutes.
  2. While the chicken is marinating, prepare the mango salsa by combining the diced mango, red onion, jalapeño, cilantro, and lime juice in a bowl. Season with salt to taste and set aside.
  3. Heat a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes per side or until fully cooked and internal temperature reaches 165°F. Remove from heat and let rest for a few minutes before slicing.
  4. Warm the corn tortillas on a skillet or grill for about 30 seconds on each side until pliable.
  5. To assemble the tacos, place sliced chicken on each tortilla, top with mango salsa, avocado slices, and crumbled queso fresco if using. Serve immediately.
