Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons chipotle peppers in adobo sauce, minced
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • Juice of 2 limes
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. In a medium bowl, whisk together the chipotle peppers, olive oil, honey, lime juice, garlic, cumin, smoked paprika, salt, and pepper until well combined.
  2. Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or up to 8 hours for more flavor.
