Ingredients:

  • 2 ripe bananas, mashed
  • 1/3 cup melted butter or coconut oil
  • 1/2 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/2 cup chocolate chips

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the mashed bananas with the melted butter or coconut oil until well combined.
  3. Stir in the sugar, egg, and vanilla extract until smooth.
  4. In another bowl, whisk together the baking soda, salt, flour, and cocoa powder.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  6. Fold in the chocolate chips.
  7. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
