Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 3 to 4 tablespoons ice water
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 3/4 cups milk
  • 3 large egg yolks, beaten
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • Whipped cream for topping
  • Chocolate shavings for garnish

Instructions:

  1. In a mixing bowl, combine flour, sugar, and salt. Add diced butter and mix until the mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until the dough comes together.
  2. Shape the dough into a ball, wrap in plastic, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 350°F (175°C). Roll out the dough on a floured surface to fit a 9-inch pie pan. Place the crust in the pan and trim the edges. Poke holes in the bottom with a fork.
  4. Bake the crust for 15-20 minutes or until lightly golden. Remove from oven and let cool.
  5. In a saucepan, whisk together sugar, cocoa powder, cornstarch, and salt. Gradually stir in milk. Cook over medium heat, stirring constantly, until the mixture thickens and starts to boil.
  6. Remove from heat and whisk a small amount of the hot mixture into the egg yolks. Then whisk the egg mixture back into the saucepan. Return to heat and cook for another 2 minutes.
  7. Remove from heat and stir in butter and vanilla extract. Pour the chocolate filling into the cooled pie crust.
  8. Let the pie cool at room temperature for about 30 minutes, then refrigerate until set, about 2 hours.
  9. Serve chilled, topped with whipped cream and chocolate shavings.
