Ingredients:

  • 2 cups pitted dates (Medjool or Deglet Noor)
  • 2 tablespoons peanut butter
  • 2 tablespoons coconut oil
  • ½ cup chopped nuts (almonds, walnuts, or cashews)
  • 2 tablespoons cocoa powder (optional)
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Extra shredded coconut, cocoa, or crushed nuts for rolling

Instructions:

  1. If the dates are dry, soak them in warm water for 10 minutes, then drain well.
  2. Add the dates, peanut butter, coconut oil, chopped nuts, cocoa powder (if using), honey or maple syrup, vanilla extract, and salt to a food processor.
  3. Blend until the mixture is well combined and sticks together but still has some texture.
  4. Scoop out small portions of the mixture and roll them into bite-sized balls.
  5. Roll each ball in your chosen coating—shredded coconut, cocoa powder, or crushed nuts.
  6. Place the finished energy balls on a tray and refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the fridge for up to 2 weeks, or freeze for longer storage.
