  • 1 cup rolled oats
  • 1/2 cup dark chocolate chips
  • 1/2 cup finely chopped dried apricots
  • 1/2 cup finely chopped dried cherries
  • 1/2 cup chopped walnuts
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup milk (or dairy-free alternative)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large mixing bowl, combine rolled oats, dark chocolate chips, dried apricots, dried cherries, and walnuts.
  3. In a separate bowl, whisk together honey (or maple syrup), cocoa powder, vanilla extract, baking powder, salt, eggs, and milk until smooth.
