Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 avocado, diced
  • 1 medium tomato, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1 tablespoon fresh lime juice (for salsa)
  • Salt to taste (for salsa)

Instructions:

  1. In a bowl, whisk together lime juice, olive oil, chopped cilantro, minced garlic, ground cumin, salt, and pepper.
  2. Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over the chicken. Seal or cover, and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
  3. While the chicken is marinating, prepare the avocado salsa by combining diced avocado, tomato, red onion, jalapeño, lime juice, and salt in a bowl. Mix gently and set aside.
  4. Preheat the grill or a grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade.
  5. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest for a few minutes.
  6. Slice the chicken and serve topped with avocado salsa.
