Ingredients:

  • 4 boneless skinless chicken breasts
  • 1 cup brown rice
  • 1 can (15 oz) black beans, rinsed and drained
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced and zested
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups chicken broth or water for cooking rice
  • 1 avocado, sliced (for garnish)
  • Lime wedges (for serving)

Instructions:

  1. In a bowl, mix olive oil, lime juice, lime zest, garlic powder, cumin, salt, and pepper to create a marinade.
  2. Add chicken breasts to the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes.
  3. While the chicken is marinating, rinse the brown rice under cold water. In a pot, combine the rice and chicken broth (or water). Bring to a boil, then reduce to a simmer, cover, and cook for about 40-45 minutes until the rice is tender and the liquid is absorbed.
  4. In a saucepan, heat the black beans over medium heat. Stir in chopped cilantro, salt, and pepper to taste. Cook until warmed through, about 5-7 minutes.
  5. Preheat a grill or grill pan over medium-high heat. Remove chicken from the marinade and grill for about 6-7 minutes per side, or until fully cooked and juices run clear (internal temperature should reach 165°F).
  6. Once the chicken is done, let it rest for a few minutes before slicing.
  7. Serve the sliced chicken over a bed of brown rice, topped with black beans, and garnish with avocado slices and lime wedges.
