Ingredients:

  • 2 cups rice
  • 1 pound chicken breast, cut into pieces
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 2 cups chicken broth (or water)

Instructions:

  1. In a bowl, combine lime juice, olive oil, chopped cilantro, salt, black pepper, garlic powder, and cumin. Add the chicken pieces, ensuring they are well-coated. Marinate for at least 30 minutes.
  2. Rinse the rice under cold water until the water runs clear. In a pot, combine the rice and chicken broth (or water) and bring to a boil.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes until the rice is cooked and liquid is absorbed.
  4. While the rice is cooking, heat a skillet over medium heat. Remove the marinated chicken from the bowl and cook in the skillet for about 6-7 minutes on each side, or until fully cooked and golden brown.
