Ingredients:

  • 1.5 lbs flank steak
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 large onion, sliced
  • 4 medium potatoes, diced
  • 1 cup rice
  • 2 cups chicken or vegetable broth
  • 1/2 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1 teaspoon cumin
  • 1 teaspoon paprika

Instructions:

  1. In a bowl, mix olive oil, minced garlic, lime juice, cumin, paprika, salt, and pepper. Marinate the flank steak in this mixture for at least 30 minutes.
  2. While the steak is marinating, cook the rice in chicken or vegetable broth according to package instructions. Once cooked, stir in chopped cilantro and set aside.
  3. In a large skillet, heat a tablespoon of olive oil over medium heat. Add diced potatoes and cook until golden brown and crispy, about 15-20 minutes.
  4. Add sliced onions to the skillet with the potatoes and sauté until onions are translucent, about 5-7 minutes. Season with salt and pepper to taste.
  5. Heat a grill or grill pan over medium-high heat. Remove flank steak from the marinade and grill for about 4-5 minutes on each side for medium-rare, or until desired doneness.
  6. Let the steak rest for a few minutes before slicing against the grain.
  7. Serve the sliced flank steak with garlic-onion potatoes and cilantro-lime rice on the side.
