Ingredients:

  • 1 ½ cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup buttermilk (or dairy-free milk)
  • 2 large eggs
  • ¼ cup melted butter (or coconut oil for dairy-free)
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and diced
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • 2 tablespoons maple syrup

Instructions:

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, combine the buttermilk, eggs, melted butter, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. In a skillet over medium heat, melt a little butter. Add the diced apples, brown sugar, and cinnamon. Sauté for about 5-7 minutes until apples are tender. Set aside.
  6. Cook the waffles according to your waffle iron's instructions until golden brown.
  7. While the waffles are cooking, whip the heavy cream until soft peaks form, then fold in the maple syrup for a sweetened maple cream.
  8. Serve the waffles topped with the sautéed apples and a dollop of maple cream.
