Ingredients:

  • 1 cup semolina flour
  • 1/2 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup extra virgin olive oil
  • 1 cup milk
  • 1 large orange (zested and juiced)
  • 1 large lemon (zested and juiced)
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1/2 tsp vanilla extract
  • 2 large eggs

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, whisk together the semolina flour, all-purpose flour, baking powder, and sea salt.
  3. In another bowl, beat the eggs and sugar until light and fluffy. Gradually add the olive oil, milk, orange juice, lemon juice, orange zest, lemon zest, and vanilla extract, mixing well.
