Ingredients:

  • 2 pounds of Yukon Gold potatoes, peeled and cut into wedges
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 4 cloves of garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • 1 cup vegetable broth
