Ingredients:

  • 6 egg yolks
  • 3/4 cup granulated sugar
  • 2/3 cup milk
  • 1 1/4 cups heavy cream
  • 1 cup mascarpone cheese
  • 1 cup strong brewed coffee, cooled
  • 1 tablespoon coffee liqueur (optional)
  • 24 ladyfingers
  • 2 tablespoons unsweetened cocoa powder

Instructions:

  1. In a medium saucepan, whisk together the egg yolks and sugar until well combined.
  2. Add the milk to the egg mixture and cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. Remove from heat and let it cool.
  3. In a large bowl, whip the heavy cream until stiff peaks form. Gently fold in the mascarpone cheese until smooth.
  4. Once the egg mixture has cooled, fold it into the mascarpone mixture until fully combined.
  5. In a shallow dish, combine the cooled coffee and coffee liqueur (if using). Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
  6. Layer half of the soaked ladyfingers in the bottom of a 9x9-inch dish. Spread half of the mascarpone mixture over the ladyfingers.
  7. Repeat the layers with the remaining ladyfingers and mascarpone mixture.
  8. Cover and refrigerate for at least 4 hours, or overnight for best results.
  9. Before serving, dust the top with cocoa powder using a fine sieve.
