Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups powdered sugar
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract (for frosting)
  • Peeps bunny marshmallow candies for decoration

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large mixing bowl, cream together 1/2 cup softened butter and 1 cup granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in 1 teaspoon vanilla extract.
  4. In a separate bowl, whisk together 1 1/2 cups flour, 2 teaspoons baking powder, and 1/4 teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with 1/2 cup whole milk, and mix until just combined.
  6. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely.
  8. For the frosting, beat together 1/2 cup softened butter and 2 cups powdered sugar until smooth. Add 2 tablespoons heavy cream and 1 teaspoon vanilla extract, mixing until creamy.
  9. Frost the cooled cupcakes generously with the buttercream frosting.
  10. Top each cupcake with a Peeps bunny for decoration.
