  • 12 oz wide egg-free pasta (like pappardelle or fettuccine)
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 16 oz mixed mushrooms (cremini, button, or shiitake), sliced
  • 1 teaspoon dried thyme
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 cup vegetable broth
  • 1 cup coconut cream or cashew cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are browned and have released their moisture, about 7-10 minutes.
