Ingredients:

  • 1 medium eggplant, diced
  • 2 medium zucchini, sliced
  • 1 medium bell pepper, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 medium ripe tomatoes, chopped
  • 1/4 cup olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  3. Stir in the diced eggplant and cook for about 5 minutes until it begins to soften.
  4. Add the sliced zucchini and diced bell pepper, cooking for another 5 minutes.
  5. Incorporate the chopped tomatoes, dried thyme, and dried basil. Season with salt and pepper to taste.
  6. Reduce the heat to low, cover the skillet, and let the mixture simmer for about 30 minutes, stirring occasionally, until all the vegetables are tender.
  7. Taste and adjust seasoning if necessary. Remove from heat and let it sit for a few minutes.
  8. Serve warm, garnished with fresh basil leaves.
