Ingredients:

  • 1 medium eggplant, diced
  • 2 medium zucchini, sliced
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 ripe tomatoes, chopped
  • 1/4 cup olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in the diced eggplant and cook for about 5 minutes until it begins to soften.
  4. Add the sliced zucchini and diced bell pepper, cooking for another 5-7 minutes until the vegetables are tender.
  5. Stir in the chopped tomatoes, dried thyme, and dried basil. Season with salt and pepper.
  6. Reduce the heat to low, cover, and let simmer for 20-25 minutes, stirring occasionally.
  7. Once the vegetables are cooked through and the flavors have melded, remove from heat.
  8. Serve warm, garnished with fresh basil leaves.
