Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 1 cup Coca-Cola
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon vegetable oil
  • Green onions, sliced (for garnish)

Instructions:

  1. In a bowl, whisk together Coca-Cola, soy sauce, minced garlic, grated ginger, apple cider vinegar, brown sugar, black pepper, and salt to create the marinade.
  2. Place the chicken thighs in a large resealable bag or bowl and pour the marinade over the chicken. Seal or cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the grill or oven to 375°F (190°C).
  4. Remove the chicken from the marinade, reserving the marinade for later. Pat the chicken dry with paper towels.
  5. In a skillet, heat vegetable oil over medium-high heat. Add the chicken thighs skin-side down and sear for about 5-7 minutes until the skin is crispy.
  6. Flip the chicken over and pour the reserved marinade over the top. If grilling, transfer the chicken to the grill and close the lid.
  7. Cook for an additional 25-30 minutes, basting occasionally with the marinade, until the chicken is cooked through and has an internal temperature of 165°F (75°C).
  8. Remove from heat and let rest for 5 minutes before serving. Garnish with sliced green onions.
