Ingredients:

  • 1 cup corn bread mix
  • 1/4 cup cocoa powder
  • 1/2 cup coconut milk
  • 1/4 cup honey
  • 1/4 cup sugar
  • 1/4 cup water
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the corn bread mix, cocoa powder, baking powder, and salt.
  3. In another bowl, whisk together the coconut milk, honey, sugar, and water until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
