Ingredients:

  • 4 cups Rice Krispies cereal
  • 3 tablespoons unsalted butter
  • 1 package (10 oz) mini marshmallows
  • 1/2 cup sweetened shredded coconut, toasted
  • 1 teaspoon almond extract
  • 1/4 teaspoon salt
  • Cooking spray or parchment paper for lining

Instructions:

  1. Grease a 9x13-inch baking dish with cooking spray or line it with parchment paper for easy removal.
  2. In a large saucepan over low heat, melt the butter. Add the mini marshmallows and stir until completely melted and smooth.
  3. Remove the saucepan from heat and stir in the almond extract and salt.
  4. Add the toasted coconut and Rice Krispies cereal to the melted marshmallow mixture. Stir until the cereal is evenly coated.
  5. Pour the mixture into the prepared baking dish and press it down evenly with a spatula or your hands (damp hands work best to avoid sticking).
