Ingredients:

  • 12-14 pitted dates, coarsely chopped
  • 1 cup roasted salted peanuts
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla bean paste
  • 1/2 cup unsweetened shredded coconut

Instructions:

  1. In a food processor, combine the chopped dates and roasted peanuts. Pulse until the mixture is finely chopped and begins to stick together.
  2. Add the creamy peanut butter and vanilla bean paste to the mixture. Pulse again until everything is well combined and forms a sticky paste.
  3. Using your hands, take small portions of the mixture and roll them into balls, about 1 inch in diameter.
  4. Place the shredded coconut in a shallow dish. Roll each ball in the shredded coconut until well coated.
  5. Transfer the coconut date balls to a plate or an airtight container. Refrigerate for at least 30 minutes to firm up before serving.
