Ingredients:

  • 1 cup rolled oats
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1/2 cup butter, softened
  • 1/2 cup coconut, shredded
  • 1 egg
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and white sugar until light and fluffy.
  3. Add the egg, lemon juice, and lemon zest to the mixture and beat until well combined.
