Ingredients:

  • 1 1/2 cups flour
  • 1/2 cup butter, softened
  • 1 cup sugar (white or brown)
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup shredded coconut
  • 1 lemon, zested and juiced
  • 1 orange, zested and juiced
  • 1 teaspoon baking powder (optional, if available)
  • 1/2 teaspoon salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the lemon zest, orange zest, lemon juice, and orange juice until well combined.
