Ingredients:

  • 1 pie crust (store-bought or homemade)
  • 2 cups crab apples, peeled and diced
  • 1 pound shrimp, peeled and deveined
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon lemon juice
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated parmesan cheese
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, sauté the chopped onion and garlic in a little olive oil until translucent.
  3. Add the shrimp to the skillet and cook until they turn pink, then remove from heat.
  4. In a mixing bowl, combine the cooked shrimp, diced crab apples, thyme, lemon juice, cream cheese, and parmesan. Season with salt and pepper to taste.
  5. Roll out the pie crust and place it in a pie dish. Fill with the shrimp and crab apple mixture.
  6. Cover with another layer of pie crust, sealing the edges. Cut slits in the top crust to allow steam to escape.
  7. Brush the top crust with the beaten egg.
  8. Bake in the preheated oven for 30-35 minutes or until the crust is golden brown.
  9. Let cool for a few minutes before slicing and serving.
