Ingredients:

  • 1 cup fresh cranberries
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • Juice of 1 orange

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a small saucepan, melt the butter and brown sugar over medium heat until combined and bubbly. Pour this mixture into a greased 9-inch round cake pan.
  3. Spread the fresh cranberries evenly over the caramelized sugar mixture in the pan.
