Ingredients:

  • 500g boneless skinless chicken thighs, diced
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 head cauliflower, cut into florets
  • 200g broccolini, trimmed
  • 1 red onion, sliced
  • 1 brown onion, diced
  • 3 cloves garlic, minced
  • 2 spring onions, sliced
  • 1/4 cup fresh basil, chopped
  • 1 birds eye chilli, finely chopped (optional)
  • 2 stalks celery, diced
  • 2 medium potatoes, peeled and diced
  • 200g mushrooms, sliced
  • Salt and pepper, to taste
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian herbs
  • 1 teaspoon rosemary

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat. Add the brown onion and garlic, sauté until translucent.
  3. Add the diced chicken thighs to the skillet and cook until browned on all sides. Season with salt, pepper, Italian herbs, and rosemary.
  4. Stir in the mushrooms, cauliflower, broccolini, potatoes, red onion, celery, and birds eye chilli (if using). Cook for about 5-7 minutes until the vegetables start to soften.
  5. In a bowl, mix the sour cream and milk until smooth. Add in the chopped basil and spring onions. Pour this mixture over the chicken and vegetables in the skillet, combining well.
  6. Transfer the mixture to a greased baking dish. In a separate bowl, combine breadcrumbs and grated parmesan cheese. Sprinkle this over the top of the chicken and vegetable mixture.
  7. Bake in the preheated oven for 25-30 minutes, until the top is golden and crispy and the chicken is cooked through.
