Ingredients:

  • 2 cups cooked pasta (penne or fusilli)
  • 1 lb boneless, skinless chicken breast, diced
  • 8 oz mushrooms, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper.
  3. Add the sliced mushrooms and minced garlic to the skillet and sauté until the mushrooms are tender, about 5 minutes.
  4. Stir in the heavy cream, chicken broth, and thyme. Bring to a simmer and let it cook for another 2-3 minutes until slightly thickened.
  5. In a large mixing bowl, combine the cooked pasta with the chicken and mushroom mixture. Mix in half of the mozzarella and all of the Parmesan cheese.
  6. Transfer the mixture to a greased baking dish. Top with the remaining mozzarella cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
  8. Garnish with chopped fresh parsley before serving.
