Ingredients:

  • 1 cup Arborio rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 vanilla bean, split and scraped
  • 1/2 teaspoon ground cinnamon
  • Zest of 1 orange
  • 1/2 cup raisins (optional)
  • Ground cinnamon for garnish

Instructions:

  1. In a medium saucepan, combine the Arborio rice, whole milk, sugar, and salt. Bring to a gentle boil over medium heat while stirring occasionally.
  2. Once boiling, reduce the heat to low and add the vanilla extract, scraped vanilla bean, ground cinnamon, and orange zest. Stir well to combine.
  3. Simmer the pudding for about 25-30 minutes, stirring frequently, until the rice is tender and the mixture has thickened to a creamy consistency.
  4. If using, add the raisins during the last 5 minutes of cooking.
  5. Remove the saucepan from heat and let it cool slightly. The pudding will continue to thicken as it cools.
  6. Serve warm or chilled, garnished with a sprinkle of ground cinnamon.
