Ingredients:

  • 1 cup arborio rice
  • 4 cups whole milk
  • 1 cup coconut milk
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cardamom
  • 1/2 cup shredded coconut (unsweetened)
  • 1/4 cup raisins (optional)
  • Chopped pistachios or almonds for garnish

Instructions:

  1. In a large saucepan, combine the arborio rice, whole milk, coconut milk, sugar, and salt. Bring to a gentle boil over medium heat, stirring frequently.
  2. Once boiling, reduce the heat to low and simmer, stirring occasionally, for about 20-25 minutes, or until the rice is tender and the mixture has thickened.
  3. Stir in the vanilla extract, ground cardamom, shredded coconut, and raisins (if using). Cook for an additional 5 minutes.
  4. Remove from heat and let the pudding cool slightly. It will thicken further as it cools.
