  • 1 lb shrimp, peeled and deveined
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup mushrooms, sliced
  • 1 cup cherry tomatoes, halved
  • 2 green onions, chopped
  • 1 medium eggplant, diced
  • 3 cloves garlic, minced
  • 2 cups cabbage, shredded
  • 1 cup heavy cream
  • 1 cup chicken stock
  • 1 cup sharp cheddar cheese, grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add the diced eggplant and sauté until tender and slightly golden, about 5-7 minutes.
