Ingredients:

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup semi-sweet chocolate chips
  • ½ cup caramel sauce
  • ½ cup chopped pecans
  • Pinch of salt

Instructions:

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined, then press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the granulated sugar and mix until well incorporated.
  4. Add the vanilla extract and mix again. Then, add the eggs one at a time, mixing on low speed until just blended after each addition.
  5. Stir in the sour cream until smooth. Gently fold in the semi-sweet chocolate chips.
  6. Pour the cheesecake filling over the prepared crust and smooth the top with a spatula.
  7. Bake in the preheated oven for about 55-60 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for about 1 hour to prevent cracking.
  9. Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight to set completely.
  10. Before serving, drizzle with caramel sauce and sprinkle with chopped pecans.
