Ingredients:

  • 2 cups whole milk
  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon vanilla extract
  • 1/2 cup granulated sugar (for caramel)
  • 2 tablespoons water (for caramel)
  • Pinch of salt

Instructions:

  1. Preheat your oven to 325°F (160°C).
  2. In a medium saucepan, heat the milk over medium heat until just simmering. Remove from heat and let cool slightly.
  3. In a mixing bowl, whisk together the eggs, 1/2 cup sugar, melted butter, vanilla extract, and a pinch of salt until well combined.
  4. Slowly pour the warm milk into the egg mixture while whisking continuously to temper the eggs.
  5. Strain the mixture through a fine sieve into a large measuring cup or bowl to remove any lumps.
  6. Pour the custard mixture into individual ramekins or a baking dish.
  7. Place the ramekins in a baking pan and fill the pan with hot water until it reaches halfway up the sides of the ramekins.
  8. Bake in the preheated oven for 30-35 minutes or until the custard is set but still slightly jiggly in the center.
  9. While the custard is baking, prepare the caramel. In a small saucepan, combine 1/2 cup sugar and 2 tablespoons water. Cook over medium heat, swirling the pan occasionally, until the sugar dissolves and turns a golden amber color.
  10. Remove from heat and let cool slightly before drizzling over the custard.
  11. Allow the custard to cool completely before serving, topped with the caramel drizzle.
