Ingredients:

  • 1 cup dried split peas, rinsed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. In a large pot, heat a splash of water or vegetable broth over medium heat. Add the onion, garlic, carrots, and celery, and sauté until the vegetables are softened, about 5-7 minutes.
  2. Stir in the cumin and smoked paprika, cooking for another minute until fragrant.
  3. Add the rinsed split peas and vegetable broth. Bring to a boil, then reduce the heat to low and simmer, covered, for about 30-35 minutes, or until the peas are tender.
  4. Once the peas are cooked, stir in the coconut milk, and season with salt and pepper to taste. Use an immersion blender to puree the soup for a creamier texture, if desired.
  5. Serve hot, garnished with fresh cilantro.
