Ingredients:

  • 1 cup split peas, rinsed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 2 celery stalks, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 4 cups vegetable broth
  • 1 can (13.5 oz) coconut milk
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until softened, about 5-7 minutes.
  2. Stir in the ground cumin and turmeric, cooking for another minute until fragrant.
  3. Add the rinsed split peas and vegetable broth. Bring to a boil, then reduce the heat and simmer for about 30-40 minutes, or until the peas are tender.
  4. Stir in the coconut milk and lime juice, and blend the soup with an immersion blender until smooth and creamy. If you prefer a chunkier texture, blend only half.
  5. Season with salt and pepper to taste, and simmer for an additional 5 minutes.
  6. Serve hot, garnished with fresh cilantro.
