Creative Chicken Biryani

Ingredients:

  • 2 cups basmati rice
  • 500 g chicken, cut into pieces
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 1/2 cup plain yogurt
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, slit
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped cilantro (coriander leaves)
  • 1/4 teaspoon saffron strands soaked in 2 tablespoons warm milk
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon turmeric powder
  • Salt to taste
  • 3 tablespoons ghee or oil
  • 4 cups water
  • 1 tablespoon lemon juice
  • Whole spices (2-3 cardamom pods, 2-3 cloves, 1 bay leaf, 1 small stick of cinnamon)

Instructions:

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a large bowl, marinate the chicken with yogurt, garlic, ginger, green chilies, turmeric powder, coriander powder, garam masala, and salt. Let it sit for at least 30 minutes.
  3. Heat ghee or oil in a heavy-bottomed pot. Add the sliced onions and sauté until golden brown. Remove half for garnishing later.
  4. Add the marinated chicken to the pot and cook until the chicken is browned and cooked through.
  5. Stir in the chopped tomatoes, mint, cilantro, and lemon juice. Cook until the tomatoes are soft.
  6. In a separate pot, bring 4 cups of water to a boil. Add the soaked and drained rice along with whole spices. Cook until the rice is 70% cooked, then drain.
  7. Layer half of the partially cooked rice over the chicken mixture in the pot. Drizzle the saffron milk over the rice, then layer the remaining rice on top.
  8. Cover the pot with a tight-fitting lid and cook on low heat for 25-30 minutes, allowing the flavors to meld and the rice to finish cooking.
  9. Once done, gently fluff the biryani with a fork and garnish with the reserved fried onions and additional fresh herbs.
