These Creative Chicken Tacos are a delightful blend of traditional Mexican flavors with a twist. Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 small corn tortillas
  • 1 ripe mango, diced
  • 1/4 red onion, finely chopped
  • 1/2 jalapeño, minced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 ripe avocado
  • 1/4 cup Greek yogurt or dairy-free alternative
  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add the chicken thighs and coat well. Marinate for at least 30 minutes.
  2. While the chicken marinates, prepare the mango salsa by combining diced mango, red onion, jalapeño, cilantro, and lime juice in a bowl. Season with salt to taste and set aside.
  3. For the avocado crema, blend the avocado with Greek yogurt, lime juice, salt, and pepper until smooth. Add water if needed to reach desired consistency.
  4. Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from the grill and let rest for a few minutes before slicing.
  5. Warm the corn tortillas on the grill for about 30 seconds on each side.
  6. To assemble the tacos, place sliced chicken on each tortilla, top with mango salsa, and drizzle with avocado crema. Serve immediately.
