Ingredients:

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 4 sheets nori (seaweed)
  • 1/2 lb sushi-grade salmon, sliced into strips
  • 1/2 avocado, sliced
  • 1/2 cucumber, julienned
  • 1/2 ripe mango, sliced into strips
  • Soy sauce, for serving
  • Wasabi, for serving
  • Pickled ginger, for serving

Instructions:

  1. Rinse sushi rice under cold water until the water runs clear. Drain and combine with water in a rice cooker. Cook according to the rice cooker's instructions.
  2. Once cooked, transfer rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then gently fold into the rice. Allow to cool slightly.
  3. Lay a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking, and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge.
  4. Arrange slices of salmon, avocado, cucumber, and mango in a line across the rice.
  5. Using the sushi mat, roll the nori away from you, pressing gently to keep the ingredients tightly packed. Roll until you reach the exposed edge of the nori. Moisten the edge with a bit of water to seal the roll.
  6. Using a sharp knife, slice the roll into 6-8 pieces. Repeat with remaining ingredients.
  7. Serve sushi rolls with soy sauce, wasabi, and pickled ginger on the side.
