Ingredients:

  • 1 lb ground turkey
  • 4 medium potatoes, diced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons creole seasoning
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced potatoes with 2 tablespoons of olive oil, the creole seasoning, salt, and pepper. Toss until the potatoes are evenly coated.
  3. Spread the seasoned potatoes on a baking sheet in a single layer and bake for 20 minutes.
  4. Meanwhile, in a skillet over medium heat, add the remaining tablespoon of olive oil. Sauté the chopped onion, garlic, and bell pepper until softened, about 5 minutes.
  5. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 7-10 minutes. Season with additional creole seasoning if desired.
  6. Remove the potatoes from the oven and mix them with the turkey mixture. Return to the oven and bake for an additional 15 minutes to allow the flavors to meld.
  7. Garnish with fresh parsley before serving.
