Ingredients:

  • 1 cup desiccated coconut
  • 1/2 cup all-purpose gluten-free flour
  • 1/4 cup sugar
  • 1/4 cup unsalted butter, softened
  • 1/4 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Zest of 1 lime
  • Pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the softened butter and sugar, and cream them together until light and fluffy.
  3. Add the coconut milk, vanilla extract, and lime zest to the mixture, stirring until well combined.
  4. In a separate bowl, mix the desiccated coconut, gluten-free flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Spoon out tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Flatten each biscuit slightly with the back of a spoon.
  8. Bake in the preheated oven for 15-18 minutes or until the edges are golden brown.
  9. Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
