Ingredients:

  • 1 cup coconut flour
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup erythritol or preferred low-carb sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine coconut flour, shredded coconut, erythritol, baking powder, and salt.
  3. In another bowl, whisk together the melted coconut oil, eggs, vanilla extract, and almond extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
  5. Using your hands, form small balls of dough and flatten them slightly before placing them on the prepared baking sheet.
