Ingredients:

  • 1 cup basmati rice
  • 1 cup lentils (red or green)
  • 2 medium tomatoes, diced
  • 1 large onion, finely chopped
  • 2 tablespoons curry powder
  • 1 teaspoon masala graham
  • 4 cups vegetable broth or water
  • 2 tablespoons olive oil
  • Salt to taste
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Rinse the basmati rice and lentils under cold water until the water runs clear. Drain and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the diced tomatoes and cook for another 3-4 minutes until they soften.
  4. Add the curry powder and stir well to combine, cooking for an additional minute to bloom the spices.
  5. Add the rinsed lentils and rice to the pot, followed by the vegetable broth or water. Bring to a boil.
  6. Reduce the heat to low, cover, and let simmer for about 20-25 minutes, or until the rice and lentils are tender and the liquid has been absorbed.
  7. Once cooked, remove from heat and let it sit covered for another 5 minutes.
  8. Fluff the rice and lentils with a fork, season with salt to taste, and sprinkle with masala graham before serving.
  9. Garnish with fresh cilantro if desired and enjoy!
